Going out now looks less like cocktails at 10 p.m. and more like meeting friends in the afternoon for a $20 latte.

I love what Ari and his team are building with Lynx. It’s rebellious, high-quality, and always busy.

The operation feels closer to a Michelin-level kitchen than a traditional café. Service runs in stations, with a cold station for matcha and foams and a hot station for espresso and milk. Think garde manger and hot line, applied to coffee.

Order a matcha and a flat white and enjoy them side by side. Muscovado syrup and vanilla are made in house. The bar is asymmetrical. Those three signature drinks on the wall might be the best in town. Be on the lookout for more exciting things coming out of this kitchen.

Grabbing a pick-me-up here is so popular that it’s not uncommon for customers to park in the red and get a ticket, making for an $80 latte. Lynx is obsessed with the last five percent and it shows in every detail.
